VPod Recipes: Berry Hibiscus Elixir

This month we’re sipping on a Berry Hibiscus Elixir!

Ingredients:

  • 1 cup of fresh mixed berries (strawberries, raspberries, and blueberries) – Rich in antioxidants and vitamins.

  • 2 tablespoons of dried hibiscus flowers – Known for their anti-inflammatory properties and vibrant color.

  • 1 tablespoon of honey or agave syrup (adjust to taste) – Natural sweeteners that are gentle on the body.

  • Juice of 1 lime – Adds a refreshing twist and vitamin C.

  • Sparkling mineral water – For hydration and effervescence.

  • Optional: A shot of vodka or a splash of champagne for those who want to turn it into a cocktail.

  • Ice cubes

  • Fresh mint leaves and extra berries for garnish

Instructions:

  • Berry-Hibiscus Infusion:

    • In a saucepan, combine 2 cups of water with the dried hibiscus flowers and half of the mixed berries. Bring to a simmer over medium heat, then reduce to low and let it simmer for about 10 minutes. The water will turn a deep red.

    • Strain the mixture into a pitcher, discarding the solids. Allow it to cool to room temperature, then refrigerate until cold.

  • Assemble the Mocktail:

    • In a glass, muddle the remaining fresh berries with the honey or agave syrup and lime juice, gently crushing the berries to release their juices.

    • Fill the glass with ice cubes, then pour in the chilled berry-hibiscus infusion until the glass is about three-quarters full.

    • Top off with sparkling mineral water for that refreshing fizz.

  • Optional Alcoholic Twist:

    • For those who prefer a cocktail, add a shot of vodka directly into the glass before topping it with the berry-hibiscus infusion and sparkling water, or gently pour a splash of champagne over the top for a celebratory fizz.

  • Garnish and Serve:

    • Garnish with a sprig of fresh mint and a few whole berries. Stir gently to combine the flavors before serving.
